Brisbane Markets® has partnered with James St Cooking School to offer a range of interactive cooking classes during 2018. The classes will be demonstration-style sessions led by one of James St Cooking School’s professional chefs in the Market Kitchen at the Brisbane Markets®.

There are three types of classes available to suit all tastes. Each class will be capped at 10-12 people to ensure that everyone enjoys a personalised cooking experience. Read on for class details.

Pastry Basics

Perfect for aspiring cooks who might not have the time to create pastry from scratch. Attendees will learn how to use store bought pastry to create three simple but delicious sweet and savoury dishes, including:

  • Individual sweet crust pastry discs with vanilla bean and cardamom poached pear and chocolate anglaise
  • Puff pastry mille-feuille with whipped Chantilly cream, fresh berries and icing sugar
  • Shortcrust mini savoury tartlets with sour cream and chives, smoked salmon and Neufchatel, flying fish roe and watercress

Autumn Classics

Attendees will learn how to create three tasty dishes perfect for the cooler months, including:

  • Braised chicken with shallots, garlic and sweet potato
  • Perfect mash (the cornerstone of any hearty meal)
  • Apple, pear and berry crumble

Vego Variations

A great class for vegetarians but this delicious menu will suit everyone. The chef will also explain how easy it is to add meat to each of these dishes. Attendees will learn to prepare:

  • Super pilaf, brown basmati, lentils, roasted garlic, shallot, caramelised sweet potato finished with fresh pesto
  • Roasted butternut pumpkin, cashew nut & spinach salad (warm) with roasted pumpkin seed oil
  • Penne and char grilled vegetables tossed in spicy tomato and mushroom sauce
